These are adapted from The Vegan Corner’s recipe. Healthy, tasty and alkaline. You can have these for breakfast, a snack or a dessert. The pumpkin/butternut squash is sweet and moist and the muffin is hearty and comforting for cold winter days.

Healthy Spiced Pumpkin Muffins

Prep Time: 10 minutes

Cook Time: 25 minutes

35 minutes

Yield: 6 large muffins

1 muffin

Calories per serving: 300

Healthy Spiced Pumpkin Muffins

Ingredients

  • 100g brown or coconut sugar
  • 180g almond milk
  • 20g coconut oil (optional)
  • 240g whole wheat flour
  • 15g baking powder
  • 180g pumpkin or butternut squash
  • 1 tbsp allspice
  • 1 tbsp mixed spice

Instructions

  1. Mix the sugar, almond milk and coconut oil in a bowl, until the sugar is dissolved.
  2. Dice the pumpkin or squash, and fold into the mix along with the flour and baking powder.
  3. Once mixed thoroughly, place into muffin tray and bake for 25 minutes at Gas Mark 5 / 190 degrees Celcius.
  4. Let cool on a baking rack. Enjoy!
