Tastiest mashed potato ever. Creamy, sweet and with mild spicy flavours but with none of the unhealthy and artery-clogging effects of butter.

Ingredients:
– 1 large sweet potato
– 3 small potatoes
– 1/2 onion
– 4 mushrooms
– 1 vegetable stock cube
– 1/2 tsp cinnamon
– 1/2 tsp cumin
– 1/2 tsp turmeric
– 1 tbsp agave nectar
– pinch black pepper
 
Method:
Scrub and roughly chop the sweet potato and potatoes. Cover with boiling water in a pan and simmer for 15 minutes.
Chop the mushrooms and onion. Add to the pan and simmer for a further 10 minutes.
Drain and add the spices, agave and stock cube (crushed and mashed into the potato mix).
Serve and enjoy!
Makes 1-2 portions  (roughly 600 calories total)
