This is unbelievably  simple, inexpensive and tasty to make as an evening meal quickly after work or or a work out, or for a quick lunch, or even for breakfast.

It’s very low fat, packed full of vegetables and low calorie. It’s filling but light on calories and will give you a real energy boost.

It’s anti-cancer because the curcumin in the turmeric combines with the sulphoraphane in the cauliflower to produce potent prostate cancer prevention and aiding properties.

So serve this to the men in your life!

Anti-Cancer Alkaline Vegan Curry with Cauliflower Rice

This is a wonderful alkaline, vegan, super-healthy, simple and deliciously tasty recipe. The curcumin in the turmeric combines with the cauliflower to produce a potent anti-cancer mix.

Ingredients

  • 2 caulifowers
  • 200g mushrooms
  • 2 medium tomatoes
  • 1 cougette
  • 1 leek
  • 2 cabbage leaves
  • 100g peas - fresh or frozen
  • 1 vegetable stock cube
  • 1/2 tsp cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1tbsp honey or agave nectar

Instructions

  1. For the cauliflower rice:
  2. Wash & break cauliflowers into floret chunks
  3. Place cauliflower into food processor or blender and process on low speed until chunks have broken down into rice-size pieces. Set aside caulifower rice in a large bowl.
  4. For the vegetable curry:
  5. Grate the courgette
  6. Chop all the other vegetables into medium chunks
  7. Add boiling water to mushrooms, leek and tomatoes in a saucepan and simmer for 5 minutes
  8. Drain simmering vegetables and add other vegetables into saucepan with them. Place back onto heat.
  9. Add the spices and stock cube. Mix and simmer for another 2 minutes
  10. Serve & enjoy
