In Day 7, I make wholemeal spelt spaghetti with veg and also some divine raspberry ripple ice cream. If you’ve not seen or tried vegan frozen banana-based ice cream before then you definitely need to watch how I make it and try is out – you are in for a real treat! I find it amazing how you can so easily make a delicious ice cream that tastes so creamy, without hormone and pus-laden milk or any other dairy products, and it’s cheap! :-)

What is This 21-Day Challenge?

I often get asked what I eat in a day. My friends, website subscribers and various other people ask what kinds of foods I eat, how much, how often etc.

And here’s the most common thing people say to me when they find out I am vegan (plant-based, alkaline diet):

“A vegan/alkaline diet is so hard, I could never do it. You have to be so disciplined.”

This kind of comment really frustrates me because since I have been 100% vegan in the past few years, I can honestly say I have never eaten so abundantly and felt so good – both in terms of energy and vitality and also eating satisfaction and enjoyment.

I am doing a 21-day challenge to film everything that I am eating to show you how to eat alkaline and plant-based/vegan the right way and hopefully see how easy, tasty, enjoyable and fun it is – as well as being best for your body and health, the planet and the animals.

As you’ll see, on this diet and lifestyle I am certainly not restricting my calories, in fact it’s quite the opposite – I eat lots of food all throughout the day!
